A cinnamon swirl is laminated dough spread with cinnamon sugar and rolled, then cut across so the spiral shows on the face. The spiral is more than decoration. Rolling the filling inside means the cinnamon is distributed through the whole pastry rather than sitting on top, and it caramelises between the layers as it bakes, which is where the sticky centre comes from. A filled and rolled pastry is denser than a folded hollow one, so the heat has further to travel before the centre is done. Four to a pack. Cinnamon sugar caramelises between the layers as it bakes, which is where the sticky centre comes from and why a swirl eats differently to a plain croissant.
