A plait is laminated dough cut and woven rather than rolled, which exposes more surface area and gives more of the crisp edges that a croissant only has at its tips. Maple and pecan is a North American pairing rather than a French one, and the two belong together for a reason beyond habit: pecans are high in oil and low in tannin compared with a walnut, so they toast without turning bitter under a sugar glaze.
