Raspberry Macaron Ice Cream Sandwiches

What is it?

Four raspberry-flavoured macaron shells are filled with ice cream and frozen into sandwich shapes. The shells should be crisp at the edges and chewy at the centre once thawed a little, while the filling stays cold and creamy. Sold in a pack of four, these sit in M&S’s frozen sweet range rather than its usual cakes or biscuits. Compared with a standard ice cream sandwich, they use almond-based macaron shells instead of wafers or sponge, so the texture leans more delicate and less crumbly.
