A split is a two-part lolly with a fruit ice on the outside and a creamy centre, and it has been in the British freezer for generations. The construction solves what a pure water ice can't. Fruit ice alone is refreshing but thin, and it melts to coloured water. A dairy centre gives body and something to reach after the sharp outer layer has gone. The pack specifies dairy ice cream for that centre, which isn't a given at this end of the freezer, where a non-dairy ice confection is at least as common. The two halves also melt at different rates, since the fruit ice has no fat in it to slow it down, so a split that has been out of the freezer for a minute is soft outside and firm within.
