What is it?

Stracciatella means shredded, and it describes a technique rather than a flavour: melted chocolate is trickled into churning gelato, where it sets on contact and shatters into irregular shards. That's why stracciatella never looks like chocolate chip. A chip is moulded and uniform, whereas a stracciatella shard is thin, brittle and different every time, and it breaks under the spoon instead of staying waxy. The base here is vanilla and deliberately plain, because the chocolate is doing all the work of texture. A classic stracciatella is built on fior di latte instead, which is plainer still. Finished with chocolate curls and made in Italy. Stracciatella is also a test of how cold a gelato is served. Too warm and the shards go soft with the base; too cold and they shatter into dust rather than breaking cleanly.
