Lemon and blueberry is a pairing borrowed from baking, where the two turn up together in muffins and drizzle cakes often enough to be a standard. It works because they fail in opposite directions. Blueberry is sweet and slightly flat on its own, with much of its character in colour rather than taste, and lemon is sharp with very little body. Together each covers what the other lacks. The two are layered rather than blended, so a bite takes them in sequence instead of averaging them, and a blueberry sauce runs through the middle. Blueberry is also one of the few fruits that keeps its colour without help once frozen, which is why the dark layer reads as fruit rather than as dye.
