A float is a fizzy drink with ice cream dropped into it, and cola with vanilla is the version most people met first. Freezing it separates what the drink combines. In a glass the ice cream melts into the cola and the two become one thing; on a stick they stay as distinct layers, so each bite takes the sharp half and the creamy half in sequence. Cola's flavour comes from a blend of citrus oils and spice rather than from any meaningful amount of kola nut, which is why cola sweets taste of cola without containing it. Vanilla is the half that struggles here. A dairy layer against something this acidic has to be sweet enough to survive it, which is why a float lolly reads sweeter than the drink it came from.
