Tesco Summer Edition Strawberry & Cream Ice Cream

What is it?

Strawberries and cream is a British summer shorthand more than a recipe, and Summer Edition is Tesco's seasonal range, so the pairing is doing double duty here. Strawberry is a difficult flavour to carry in ice cream. The fruit is mild and mostly water, so a base holding real strawberry tends towards ice crystals while one holding only flavouring tastes like coloured cream. Pairing it with a cream note is the usual way through: the dairy gives body the fruit can't supply on its own. The Summer Edition line runs to lollies and cones as well as tubs, and it's the part of the range that changes year to year rather than staying put.
