Core puts a column of something soft down the middle of the pint instead of running it through as a swirl. Filling it is a separate operation: the ice cream is packed with a void left in the center, and the core is deposited into it before the lid goes on. That changes how the tub gets eaten. A swirl is distributed and a core is not, so the first spoonful from the edge is different from one taken down the middle, and the pint has a structure that rewards digging. Here two ice creams sit around it, chocolate and vanilla, with fudge brownies through them and brownie batter at the center. Batter and baked brownie are the same thing at two stages of one process, and that's the joke the flavor is built on.
