Cold brew rather than coffee, which is a real distinction. Brewing without heat pulls fewer of the acidic and bitter compounds out of the grounds, so cold brew is rounder and less sharp, and it sits under chocolate more easily than an espresso would. That suits a frozen product. Cold blunts aromatics, so a coffee ice cream usually has to be built stronger to survive it, and starting from something already low in acidity means the strength doesn't arrive as bitterness. Chocolate cookies and cookie swirls run through the base with fudge chips in the topping, which makes this the darkest thing in the Sundaes line and the only one built on coffee.
