Topped puts a solid layer of ganache across the surface of the pint, so the first thing a spoon meets is chocolate that has to be broken through before any ice cream arrives. That's a different proposition from a swirl or a core. The topping is finite, sitting only at the top, which means the tub changes as it goes: the first few spoonfuls carry ganache and fudge chips and the rest don't. Underneath, this one is built as a Boston cream pie, with vanilla custard ice cream, cake pieces and pastry cream swirls. Custard means egg yolk in the base, which sets richer and slightly yellow, and it's the detail that separates a custard ice cream from a plain vanilla.
