Chocolate and peanut butter is more American than almost any other flavor combination, and it barely registers as a pairing across most of Europe. Peanut butter is awkward in ice cream for the reason it's easy on toast. It's roughly half fat, and that fat competes with the cream, so too much turns the base heavy and coats the mouth in a way that stops it tasting cold. Keeping it concentrated instead of blending it evenly through is the usual way round that. Salt is the other half of why it works. Roasted peanut reads as savory, and it's the only thing in the tub pulling against the sugar.
