Cherry arrives as ribbons and not as fruit pieces, and that's a decision about water. Whole cherries carry a lot of it and freeze into hard lumps. A ribbon is concentrated enough to stay soft, and it keeps its flavor where a piece would go mealy. The truffles are ganache, chocolate and cream rather than chocolate alone, so they stay soft too. That makes this unusual: most fruit and chocolate ice creams put something hard in for contrast, and this one has nothing in it that resists. Cherry and chocolate is an old European pairing, and the acid in the fruit is what keeps a ganache this rich from sitting heavy.
