There's coffee in here, which the name gives no hint of. The infusion is whiskey, coffee and cocoa together, and those three are what Irish cream tastes of, so the tub reconstructs the liqueur instead of simply adding it. The alcohol is the constraint. It lowers the freezing point, so a mix carrying much of it won't set properly, and the flavor has to arrive without the volume that would come with it in a glass. Brownie pieces and chocolaty swirls do the rest. Chocolate is already part of what the flavor is built on, so the inclusions extend it instead of introducing something new.
