Coconut is the base and pineapple is the inclusion, which is the reverse of how the name reads. There's a good reason for it. Raw pineapple contains bromelain, an enzyme that breaks down protein, and in an uncooked dairy mix that turns the texture unpleasant and leaves bitterness behind. Heat deactivates it, which is why processed pineapple behaves and raw pineapple doesn't. Coconut is the easier half and a useful partner, since it brings its own fat and sits comfortably in a dairy base instead of thinning it the way a watery fruit would. Between them they read as a single tropical flavor rather than two.
