Rocky road came out of Oakland, California around 1929, though Dreyer's and Fentons Creamery have both claimed it. The name is usually read as a nod to the Depression and to the lumpy texture. Marshmallow is the difficult ingredient. It's aerated sugar and gelatin, and both air and gelatin behave badly frozen, so marshmallow that stays soft in ice cream has to be formulated for it rather than dropped in. The almonds do the structural work. Between a soft swirl and a soft base there's nothing to break the texture, and the nuts are the only element in the tub that resists.
