Hand-cut boardwalk fries get fried in 100% peanut oil, then tossed with Cajun seasoning after they come out of the fryer. Five Guys uses whole potatoes cut in store, so the shape and thickness can vary a bit from batch to batch, but the fries are generally thick enough to stay soft inside while the outside picks up a light crust. Compared with the regular fries in the Five Guys lineup, these come with the same loose, overfilled portion in a cup and bag, plus a coating of paprika, garlic, cayenne, and other spices. The seasoning clings more to the rough, craggy pieces, and some of it ends up at the bottom of the bag.
