Thick-cut Angus beef slices are wok-stir-fried with onions and mushrooms in a dark soy-based sauce. The beef comes in larger pieces than the thinner slices used in Panda Express’s Broccoli Beef, so it eats with a firmer, meatier bite. Onions and mushrooms soften in the pan and pick up the sauce, which runs deeper and darker than the lighter stir-fry sauces in much of the lineup. Because the meat is cut thick, it can change texture as it sits in the steam table, so freshness matters here more than with some other entrees.
