The ice cream sandwich in its plainest form, and Peters has made this one long enough that the shape is familiar without the brand name attached to it. The biscuits are the interesting part. Wheat flour sits second in the ingredient list, ahead of sugar, and molasses and brown rice syrup are in there too, which is what gives the wafer its darker colour and a slightly malty edge rather than tasting of nothing much. They're baked soft rather than crisp, as every ice cream sandwich has to be. A crisp biscuit would shatter and push the ice cream out the sides when bitten, so the wafer has to yield at the same rate as what's between it.
