It has to hold a cut edge, so the layers need to be firm enough to stay separate and soft enough to slice without cracking, which is why glucose syrup and maltodextrin sit high in the ingredient list. Chocolate, strawberry and vanilla is the safest possible combination for something bought to feed a group, and that's the point of it. Sprinkles are the only decoration, which leaves anything further up to whoever is serving it.
